I make this and then lunch on it for a week.
Dressing:
1 tablespoon lemon juice
1 tablespoon vinegar (wine vinegar is best)
2 tablespoons oil (olive oil is best)
1 teaspoon dried oregano
salt and pepper
Mix all together and pour over salad
Salad:
Dice about 6 tomatoes
Dice a red or green pepper
Chop up a can of pitted black olives (discard juice)
One container of feta cheese, crumbled

Picked up all the ingredients for this today but haven't been home long enough yet to open cans and throw it into a tupperware. Can't wait to try it!
